When most people hear it’s a vegan dessert, they ask how she makes it without milk and eggs.
“There are lots of substitutions you can choose and, honestly, it tastes just the same,” she said. “I try not to make my stuff too sweet because I have found when I ordered a cake that was vegan, it tasted like it was just sugar and I didn’t like it at all.”
It has meant a lot of taste-testing by her friends, she said.
In fact, it was a friend at Unbelievabowl Smoothie Bowls who told her about a commercial kitchen at Office Inc.’s Food Opportunity Resource Centre (FORK) in Barrie that she could use to create her baked goods.
“I was looking into a lot of commercial kitchens, and FORK has everything I need. I barely have to bring anything, except the ingredients.”
Using fresh ingredients when she can, like in-season strawberries, Kasserman makes cakes, cheesecakes, cookies, tarts, cupcakes and energy balls.
“I’m starting to include vegan/keto options. A lot of it can also be made gluten-free.”
The name Moonbeam came from Kasserman’s love of the moon and the stars. Her top-selling items so far are the galaxy cupcakes and coconut-lime cupcakes.
She delivers to the Barrie, Angus, Innisfil, New Tecumseth and Midhurst areas. Prices range from $26 for six cupcakes to $62 for an eight-inch cake.
