While the Keto diet continues to be popular, there has been a new range of cookbooks out to aid those following it. Three more new ones have hit shelves recently.
For those couples doing the diet together is “The Keto For Two Cookbook” by Lindsay Boyers, CHNC (Adams Media, $16.99).
This books contains 100 recipes made for two people, and not a crowd, so you don’t have to downsize recipes or have a lot of leftovers.
Boyers is a holistic nutritionist and the author of several Keto cookbooks.
There are 10 chapters of recipes: Breakfasts, Soups and Salads, Appetizers and Snacks, Side Dishes, Chicken Main Dishes, Pork Main Dishes, Beef Main Dishes, Seafood and Fish Main Dishes, Vegetarian Main Dishes and Desserts.
Breakfasts has recipes for Peanut Butter Pancakes, Bacon Hash and Western Scrambled Eggs.
Soups and Salads has recipes like Creamy Broccoli Soup and Spinach and Tuna Salad.

I tried making Zucchini Chicken Alfredo from the cookbook – finding already spiralized zucchini at the local grocery store. All that was left was making the alfredo sauce and the chicken! It didn’t exactly taste like alfredo to me, but it was still pretty good.
If those on the keto diet are looking for quick meals look no further than “Weeknight Keto” by Kristy Bernardo (Page Street Publishing, $21.99).
Bernardo, author of several Instant Pot (my favorite accessory!) cookbooks and founder of The Wicked Noodle, collects 75 low-carb dishes for after work dinners.

One evening I made Boursin Cheese & Bacon-Stuffed Chicken Breasts. This involved packing the cheese into small slits in the chicken, then wrapping bacon around the whole thing and baking it. My stepdaughter was amused that this was “diet” food, but everyone loved it and wanted more.
